We have an amazing selection of salumi from Brooklyn, a smoked prosciutto made from Berkshire pigs in Virginia, and a variety of other natural, nitrate-free, salt-cured meats. The smoked prosciutto stands up to any other in the world, but as with our cheese selection, we reach out overseas if the quality is unmatched. There’s nothing like Prosciutto San Daniele. Spain still makes the best chorizo.
Selecting the right products is only one step. They also have to be prepared in the right way. A word of advice: If you ever see someone putting a finely cured ham in a motorized meat slicer, cancel your order. The blades in those machines spin so fast they actually burn the meat. This would be a slap in the face to the artisans producing the incredible meats we offer, so we installed our beautiful, hand-cranked Berkel Slicer to ensure the best possible quality.
